Little bite sized parcels bursting with flavour and gains goodness. Perfect as a midday snack or dessert.
Ingredients
- 2 eggs, beaten
- 4 scoops of chocolate NZProtein powder (we used pea isolate)
- 2 tsp cacao nibs
- 1/4 cup cacao powder
- 1/4 cup NZProtein Powdered Peanut Butter
- 3/4 cup coconut milk
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 tbsp coconut sugar (or desired alternative)
- 1/2 cup raspberries
- 1 tbsp desiccated coconut
Directions
1. Pre-heat oven to 180 degrees.
2. Mix all dry ingredients in a bowl.
3. Mix all wet ingredients in another bowl.
4. Fold in together, be careful not to blend as it will add too much air to the batter.
5. Line and grease a small muffin tray.
6. Pour in batter and top with coconut or raspberries.
7. Bake for 10-15 minutes or until a knife comes out clean. Don't open oven while cooking as may cause deflation.
8. Remove bites from oven and place on a cooling rack until able to be removed from tray.
